Calcium Propionate

Calcium Propionate is a white powder or crystal, is odorless, or slightly smells propionic acid, and stable to heat and light. It is highly hydroscopic, soluble inwater (50g/100ml) and insoluble in ethanol and ether. Under the acidic condition, it generates free propionic cid which has antibiotic effect.

Application

As a food additive, it is listed as E number 282 in the Codex Alimentarius. Calcium propionate is used as a preservative in a wide variety of products, including bread, other baked goods, processed meat, whey, and other dairy products.
